Management of projects might be a little beyond the scope, but I'm sure it could be covered in a basic sense (I.E. difficulties with organizing large projects, logistics).

I don't know where subsea and offshore would fit, but those definitely go into the "cool" section along with underwater pipe welding.

Stress analysis issues also should be covered, but not too technical. This wouldn't be an instructional show, just informational (and hopefully, inspirational).
