I don't think I have made any conclusion for you. What we (Steve McKenzie & I) have given you are just options.
In this particular example : 1" branch connection from a 12" main :
Steve McKenzie pointed out three (of many) possible ways to accomplish the task :
1.) Using standard tees and reducing fittings.
2.) Using a pipe stub-in.
3.) Using olets, threadolets, weldolets, etc.
I in turn put in another option : using half or full couplings
These are just options for you. The final conclusion/decision has to be made by you, the Project Engineer.
The bottom line is safety, economics and your previous experience on what works in your area and your shop.

Thanks for your comments but maybe I was not clear in explanation that you have concluded like that.
Of course taking a 1" branch from a 12" header would be much easier by a halfcoupling or sockolet or a boss and we would do the same.
The main purpose is to use fittings and to reduce reinforcement pads when making branches.
