Found it: Mozilla Thunderbird (
<a href="http://www.mozilla.org/products/thunderbird/">http://www.mozilla.org/products/thunderbird/</a> ) allows you to leave messages on your server after downloading them. Tools > Account Settings
> Server Settings > Leave messages on server.

It also has some nice junk email filtering abilities.
