Just that: To choke the flow. You are most probably talking about the valve on the wellhead (often called the Christmas Tree in western countries) that feeds a flow line. The pressure in most newly drilled oil and gas wells is much higher than required so it has to be reduced before feeding the oil or gas processing facility. That is one function of the choke valve. Also, petroleum engineers do not let oil and gas wells flow uncontrolled at maximum flow. They have a very detailed plan worked out on how they want the underground oil or gas field to deplete over its life time. Basically the flow from each well in the field has to be carefully controlled to achieve the maximum yield from the field. If they did not do that they could loose a surprisingly large amount of production, so the choke valve is set to produce the well at the optimum flow rate for that well on that field. This is a large and interesting subject way beyond the scope of this site. If you have access to a petroleum engineer in one of the companies you work with, grab an opportunity to ask him (or her) to explain the workings of the underground field. It is a fascinating topic.
