Paul:
In my opinion (and I've been known to have an opinion on nearly everything), and assuming that I can approach "esteemed members", neither Chemical nor Mechanical Engineering has the right total focus, but both provide equivalent benefit and basics. Perhaps the best would be the German "Process Engineer"? In any case, following the diploma/degree, one should then be assigned to be the go-for (as in "go" get that part or tool "for" me) to either the most cantankerous, experienced pipe fitter around or the youngest and most in need of being able to push someone around pipefitter, for at least 6 months. That would take care of the humility and BS detection parts. CAD can be picked up later, when the BS detection and the "feel" for what works comes along - all you need is a mouse and software with some training. You can even let CAD-jockeys do most of the detailing, unless you have the time.

Please see this page http://en.wikipedia.org/wiki/Leet And try again.
If you are truly committed to the discipline of piping design (hint: it's not all about computer simulations) then spend more time studying it and learn.
Although there are some pretty amazing people here, we cannot do your homework for you or line you up for a job.
As an aside, what do the esteemed members think is appropriate study for the discipline?
