Yes, as you rightly said One NPS is the normal pracitice. If your pipe size is large, you can go for smaller spool piece. However, under extreme conditions, the lenght of spool piece shall be more than 3T in order to avoid the overlap of HAZs of adjacent weld joints.

Hope this give you an additional idea for desiding minimum length of spool piece.
