I already asked customer and there is no reply so far, probably someone wrote the spec 15 years back & no one knows why is this requirement specified. I asked the vendor as well and I wasn't satisfied with his reasoning. So I thought of putting this up to the forum to stir up some technical discussions. I believe no technical question is a silly question but if not asked makes a man silly and when rebuffed makes whole forum silly.

Ask your customer, not the list. If your customer specified zinc
plating they probably have a good reason to do so. Don't forget you're
eventually going to have to explain the deviation from their spec, and
you're going to look awfully pathetic if all you can say is that you
heard it on the Internet from someone you never met, whose
qualifications you never checked. You should also get back to your
vendor and and find out why they want to use epoxy. If the only reason
they can give is that they can't supply zinc plating, thank them nicely
and find someone else to supply the gaskets.
