Impossible to give a definitive answer with such little info, but my initial thought is that you're worried about pockets/no flow areas. I would run non-pocketed lines to the closed drain. If you have a number of drains in the same location, don't run individual lines, group them into one line and run this down free-draining to the closed header. What makes you think that you have to run the vents to grade?
It sounds like you're thinking of changing spec? SS isn't necessarily the answer. If you provide more info on the commodity and design conditions you'll get some better guidance from other members. It won't come from me however, as I'm not qualified to talk materials. I can say that I've worked on many corrosive services where the choice was lined pipe not SS.
